Spring and Autumn Apricot Ice Cream

Serves 8

Overnight soaking + 20 minutes + chilling + freezing

Craving apricot ice cream out of season? This recipe is for you. Use the best quality apple juice and dried apricots that you can find


300g dried apricots

300ml cloudy/pressed apple juice

4 tbsp caster sugar

400g Greek yogurt

4 tbsp crème fraiche

2 tbsp runny honey


  • Put the apricots into a saucepan with the apple juice, sugar and 100ml water. Place over a low heat, and take the pan off the heat just as the liquid comes to the boil. Allow to steep overnight

  • Blitz the apricot mixture until really really smooth. You may need to sieve this as well if you can’t get it smooth enough. Add the yogurt, crème fraiche and honey and freeze either in your freezer, stirring a couple of times, or use an ice cream maker
