Strawberry Ice Cream Flavoured with Balsamic Vinegar

Makes about 870ml

Takes 3 hours plus freezing

This recipe perks up less than sweet or flavoursome strawberries. The balsamic vinegar flavour sits behind the strawberries and lifts their flavour very nicely indeed, making a zesty, fruity ice cream that goes very well with short bread biccies.


450g fresh strawberries

100g caster sugar (you may need a little more if strawberries aren’t very sweet)

1 tbsp balsamic vinegar

150ml double cream


  • Wash and hull the strawberries. Dry them thoroughly and blitz them in a food processor along with the sugar. Switch off blender, add the balsamic vinegar and give a final blend to mix it in well. Check for sweetness, and add more sugar if needs be

  • Refrigerate for 2-3 hours to bring out the flavours, then stir in the cream. Either freeze in a container or put in an ice cream maker and freeze
