Quick Sauce for Pasta or Gnocchi

Takes 10 minutes


This is quite rich so can be paired with spinach or rocket.


100g cubed gorgonzola (piccante), or St Agur cheese

75-100mls passata

40g mushrooms, sliced

Curly leaf parsley, finely chopped

Small amount of butter


  • Lightly fry mushrooms in butter. Remove and set aside. Get pasta or gnocchi cooking

  • Add a little olive oil to the pan and fry cheese until melted. Add passata slowly until desired cheese/ tomato balance is created. Add mushrooms and ground pepper. Serve sauce with pasta or gnocchi and rocket/spinach
