Sesame Wafers

Takes 30 minutes

Makes 15-20 Wafers

These wafer-y biscuits went down a storm at Nik’s book launch. The mace gives a lovely subtle flavour. They pretty much go with everything. Don’t worry when you are mixing everything that it seems too solid, the hot sesame seeds melt the butter, and the egg then turns it into a thickish batter.

 

50g white sesame seeds

40g butter or butter substitute

75g plain flour (gluten free works fine)

1 teasp dried mace

1 teasp baking powder

1 egg

·      Preheat the oven to 180c. Toast the sesame seeds on a baking tray for 8-9 minutes until they get a little colour, shaking the tray from time to time

·      Meanwhile, mix the mace and baking powder with the flour and rub in the butter. 

·      When the sesame seeds are lightly toasted, tip into the flour mix, when still hot. Stir well to combine then beat in the egg. Turn up the oven to 190c.

·      Put a heaped teaspoon of the mixture onto a greased baking tray – they can be quite close together. When the oven is up to temperature, bake for 12-15    minutes until    

       golden. Cool on a rack.
