A delicious mocktail for (more or less) Dry January, it’s sweet and savoury in equal measures, with a lovely intensity brought by the cayenne. If you can’t get smoky bitters, Angostura will work fine, but the smokiness adds a lovely extra dimension
Juice of 3 passion fruit
Juice of 1 lime
10 drops smoky bitters (Mrs Betters Bitters] is an excellent brand)
¼ tspn cayenne
1 tbspn agave syrup
10 very finely chopped fresh mint leaves
300mls sparkling water
Mix the juices, the bitters, the cayenne and the mint leaves in a bowl, then divide them between two wine glasses. Top each glass up with half of the sparkling water, and serve
