Chocolate Pear Miso Mousse

This superfast vegan pud is based on Rachel de Thample’s recipe – she’s now at the River Cottage but used to live in Crystal Palace - see @dethample. You will need a high-powered blender (e.g. nutribullet) to get the silky-smooth texture.
4 large ripe pears (about 400g)
4 tbsp raw cacao or cocoa powder
2 tbsp olive or walnut oil
1-2 tbsp honey /maple syrup
1-2 tsp miso
Pinch of (smoked) sea salt
Peel the pears and remove the seeds, stalk and base.
Blend the prepared pears with the remaining ingredients until smooth and creamy, starting with 1 tbsp honey and 1 teasp miso, adding more to achieve your desired sweet-savoury balance. Spoon into glasses and chill for 1 hour
